Chili Cheese Sweet Potato Casserole

Ingredients:

3 large sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn kernels, drained
1/2 cup diced red onion
1/2 cup diced bell pepper
1/2 cup diced jalapeño pepper
1 cup shredded sharp cheddar cheese
1/2 cup crushed tortilla chips
1/4 cup chopped fresh cilantro

Instructions:

1. Preheat oven to 375°F.
2. Place sweet potatoes in a large bowl. Toss with olive oil, cumin, chili powder, garlic powder, salt, and pepper.
3. Spread sweet potatoes in a single layer on a baking sheet. Bake for 20 minutes, or until tender.
4. In a large bowl, combine black beans, corn, red onion, bell pepper, jalapeño, and cheddar cheese.
5. Transfer sweet potatoes to a large baking dish. Spread black bean mixture over sweet potatoes. Sprinkle with crushed tortilla chips.
6. Bake for 20 minutes, or until cheese is melted and bubbly.
7. Garnish with fresh cilantro before serving. Enjoy!
